Healthy Cinco de Mayo Inspired Recipes

I love celebrating Cinco de Mayo for many reasons but indulging in Mexican food is definitely at the top of my list. I also love all the fun and festive decorations with so many colors, textures and patterns.

And of course no celebration is complete without some delicious cocktails.

The wonderful thing about good quality Mexican food is that the recipes are made up of fresh ingredients, plenty of herbs and citrus juices. I wanted to share with you some great options that are not only delicious but healthy too!

Start your Mexican-inspired meal with a refreshing salad like this one.

Vegan Tomato Salad with Cucumber, Avocado, Cilantro, and Lime (Low-Carb, Gluten-Free, Paleo)

Creamy Avocado Cilantro Dressing

This is a great topper for not only salads but as a creamy substitute to sour cream that is typically used in most Mexican dishes. This recipe uses greek yogurt, a high protein & low fat ingredient, in place of sour cream.

I like to add some garlic powder to my version.

Traditional Mexican Shrimp Cocktail

Shrimp is definitely a great ingredient used in many Mexican dishes. Try this amazing appetizer using jumbo shrimp that will wow your senses. Don't forget a low calorie Mexican beer like Dos X Light to wash it down.

Turkey Taco Lettuce Wraps

A great way to keep a classic Mexican dish like Tacos healthy is by using a protein like GROUND TURKEY and removing the taco all together. By substituting the corn tortilla used in typical Taco recipes with lettuce, you lower your carb intake which frees up your carb consumption for your cocktail! Make sure to keep your total cheese consumption to only 1/4Cup so don't over do it with the cheese!

The Skinniest Skinny Margarita

Like I mentioned before, not celebration is complete without a cocktail but unfortunately typical Margaritas are over loaded with sugar! No Bueno! Instead, try this low carb low Sugar version.

As I watched my body change slowly from Spring to Summer for the worst last year, I felt powerless. I kept indulging, making bad and unhealthy choices but that was just part of the vicious cycle. The softer, flabbier and more lbs I put on, the more depressed I got, and the worse I treated my body.
